Menu Monday

Junior Mint Ice Cream Pie

27 cream filled chocolate oreos crushed
1/3 c melted margerine or butter
1/3 c chocolate covered mints ( junior mints) reserve a few to decorate
1/4 c milk
7 oz marshmallow cream
2 c heavy whipping cream
1 container coolwhip

In bowl combine cookie crumbs and melted butter. Press onto and up the sides of a buttered large pie plate.Chill for at least 30 Minutes. In a small saucepan heat mint candies and milk over low heat until mints are melted, stir until smooth.Cool 10- 15 minutes.
Place marshmallow cream in a mixing bowl gradually beat in mint mixture.Fold in whipped heavy whipping cream. Top with cool whip sprinkle on a few mints to garnish.Transfer to chilled cookie crust.Cover and freeze until firm. May be frozen up to eight weeks. Set out 20 minutes before serving (to soften).

This is a great celebration dessert. I made it for my husband after he completed a marathon this past April. He loved it so much- he requested it instead of a birthday cake.
